The edible bone is finely ground into each patty. For our Turkey Patties, we use turkey necks. For our Beef, Lamb, and Venison Patties, we use beef necks. For our Chicken Patties, the bone content comes from chicken legs and chicken backs. For our Duck Patties, we use the whole duck, including the bones.
